It’s Christmas time and Santa will be coming soon! I’m here to help ensure that he enjoys the cookies you leave out for him on Christmas Eve. This recipe has been in the family for quite some time and it’s a good one :) My meme has been making these cookies ever since I can remember. The recipe came from the lunch ladies at the elementary school my mom went to in Mexico, Missouri. Meme said that they were the best cookies she’d ever had and was determined to get the recipe. Without hesitation the lunch ladies shared it with her and she’s been sharing these cookies with our family ever since. Unlike the store-bought sugar cookies, these babies are round and dense but not heavy. They’re soft, but not chewy. And the icing will literally melt in your mouth. So put on some Jingle Bell Rock, grab your sprinkles, and let’s get started!
Cookie Recipe
Ingredients:
1 cup sugar
1 cup powdered sugar
1 cup butter
1 cup cooking oil
2 eggs
4 1/2 cup flour
1 tsp baking soda
1 tsp cream of tarter
1 tsp vanilla
Directions:
Combine sugars, butter and oil
Add eggs - beat
Add remaining ingredients
Mix!
Bake for 9-10 minutes
Let cookies cool before icing them
Icing Recipe
Ingredients:
2 tbsp butter
1 tbsp almond extract
2 tbsp milk
1 cup powdered sugar
Directions:
Partially melt butter
Add in almond extract and milk
Add powdered sugar and mix
Continue to add powdered sugar until
you find a consistency you likeApply a layer or two onto each cookie
